Method

    Mix soy sauce, oyster sauce, fish sauce, sesame oil, and sugar in a small bowl. Set aside so it's ready to go — stir fry moves fast.

    Heat vegetable oil in a wok or large frying pan over high heat until it just starts to smoke.

    High heat is essential. Medium heat steams the pork instead of browning it.

    Add pork mince in a single layer. Leave undisturbed for 2 minutes to develop colour. Then break up and stir-fry until cooked through, about 4–5 minutes total.

    Don't rush the browning — this is where the flavour comes from.

    Push pork to one side. Add garlic and chilli to the empty side of the wok. Fry for 30 seconds until fragrant and just golden. Stir through the pork.

    Add green beans. Toss everything together and stir-fry for 3–4 minutes until the beans are tender but still have a bite.

    For kids who don't like chilli, plate their portion now before adding the sauce.

    Pour the sauce over everything. Toss to coat. Cook for 1 more minute until the sauce is absorbed and glossy. Scatter with spring onion and serve over steamed rice.

Notes & Swaps

Make it work for your family

  • Spice control: add chilli at the end after plating the kids' portions, or skip entirely and add a teaspoon of chilli oil to the adults' bowls.
  • No pork mince? Chicken mince works just as well. Beef mince is earthier but also delicious.
  • Swap green beans for broccolini, bok choy, or sugar snap peas.
  • Gluten-free: use tamari, gluten-free oyster sauce, and coconut aminos in place of fish sauce.
  • Leftovers are excellent the next day — reheat in a pan with a splash of water.
  • Double the batch and freeze half the cooked mince before adding beans — thaws and reheats perfectly.
