Chuck it in the oven and forget about it. This is the lowest-effort family dinner we know — sausages and veg tossed together on one tray, roasted until everything is golden and slightly sticky. Kids eat it without complaint. You barely have to do anything.

Method

    Preheat oven to 200°C. Place baby potatoes and carrots on a large baking tray. Toss with 2 tbsp olive oil, smoked paprika, herbs, salt, and pepper. Spread out evenly. Roast 10 minutes.

    Remove tray. Add capsicum, zucchini, and red onion. Drizzle remaining olive oil and balsamic vinegar over vegetables. Toss to coat.

    Nestle sausages between the vegetables on the tray.

    Don't pile everything up — a single layer means everything roasts rather than steams.

    Return to oven and roast 22–25 minutes, turning sausages once halfway through, until sausages are golden and cooked through and vegetables are tender with caramelised edges.

    Serve straight from the tray. Put a pot of wholegrain mustard on the table and let everyone dip.

Notes & Swaps

Make it work for your family

  • Use any sausages — chicken, pork, or lamb all work.
  • Add a tin of drained chickpeas to the tray for extra protein.
  • Swap veg based on what needs using — pumpkin, broccoli, and sweet potato all work (cut denser veg smaller).
  • Leftovers make an excellent frittata the next morning.
  • Make ahead: prep and refrigerate the tray, then roast when ready.
