Method

  1. 1
Heat olive oil in a large heavy-based pan over medium heat. Add onion, carrot, and celery. Cook 8 minutes until softened, stirring occasionally. Add garlic and cook 1 minute more.
  2. 2
Increase heat to medium-high. Add beef mince and cook 6–8 minutes, breaking up with a spoon, until browned all over. Season generously with salt and pepper.

Don't stir too often — let it brown, not steam.

  3. 3
Push meat aside. Add tomato paste to the centre of the pan and cook 2 minutes, stirring, until it darkens slightly. Stir through the meat mixture.
  4. 4
Add crushed tomatoes, beef stock, oregano, basil, and bay leaf. Stir to combine. Reduce heat to low and simmer 20 minutes, stirring occasionally, until sauce thickens.
  5. 5
Cook pasta according to packet instructions. Remove bay leaf. Taste sauce and adjust seasoning. Serve over pasta with parmesan.

Notes & Swaps

Make it work for your family

  • Freeze sauce in portions for up to 3 months.
  • Add a splash of red wine with the tomatoes for extra depth.
  • Use any mince — lamb or pork both work.
  • Swap pasta for zucchini noodles or serve over rice for a variation.
  • Picky eaters? Blend the sauce smooth before serving.
